Hi, I’m Nicole – the Mum behind Simple Home Edit.
I used to be a frazzled home cook, constantly wondering what to make for dinner and spending far too much time, money, and energy in the kitchen. Meal planning changed everything. Now, I share all my recipes, tips, and tricks to help you save time, reduce waste, and make dinner feel easy again.
I live in Sydney, Australia, with my husband (lover of lawns and camping), our two gorgeous kids (my biggest fans and harshest critics), and our two Spoodles – Oscar, our gentle senior, and Rose, his cheeky little sister.
At the end of a long day, we all want to sit down to a comforting, home-cooked meal – without spending hours making it. My favourite meals are fast, affordable, and made with real supermarket ingredients. Anything I can eat in slippers with a glass of wine in hand gets extra points! You’ll find:
Because dinners at home can absolutely be as exciting (and way cheaper!) than your local takeaway.
I’ve always loved food, but for years I felt stuck in a cycle of impulse shopping, wasted ingredients, and midweek takeaway. My fridge was full, my wallet wasn’t, and I still had no idea what was for dinner.
When I started decluttering my home and planning my meals, everything changed. I began saving money, wasting less, and – most importantly – feeling calm about dinnertime. You’ll see results just as quickly. My approach is simple: easy recipes, smart planning, and zero guilt. You can eat fresh, flavourful food at home, spend less time in the kitchen, and still have more time for what actually matters.
Meal planning isn’t about being rigid; it’s about taking the mental load out of “What’s for dinner?”. It’s choosing recipes and shopping ahead to save time, money, and stress. It means fewer impulse buys, less waste, and a fridge full of food you’ll actually use.
There’s no one-size-fits-all plan – that’s why I share flexible meal ideas, planning guides, and make-ahead tips throughout the site to help you find what works for you.
You’ll find familiar, family-friendly flavours made with everyday ingredients. Once you’ve stocked your pantry with the basics, you can create a wide range of dishes – from quick stir-fries to hearty one-pan meals – without extra fuss.
I’m all about smart shortcuts, never at the expense of flavour. My recipes are inspired by my European upbringing (yes, cabbage always makes an appearance) and my husband’s Asian background, which means a mix of hearty classics and fresh, flavour-packed dishes that are easy to love.
The true catalyst behind my cooking? My kids. When they came along, I wanted our home to feel like a place where we cooked, ate, and connected together – even on the busiest nights.
My debut, #1 bestselling cookbook – is filled with over 80 fast, low-cost dinner ideas and time-saving tips. It’s the foundation of my personal meal-planning process and a great place to start if you’re ready to make dinnertime easier.
My newest release, #1 bestselling cookbook, takes things even further with fresh, family-friendly recipes you can make ahead, freeze, and actually look forward to cooking.
Both books are designed to help you eat well, save money, and stress less – because dinner doesn’t have to be complicated to be delicious.
I’m here to help you:
Thank you for being here! Every recipe on this site is a real dinner that’s actually been cooked (and approved… eventually) by my family. So much love, testing, and “maybe-this-needs-more-paprika” energy goes into each one. Knowing my recipes are helping make your evenings a little calmer and tastier means the world.
I test, tweak, and simplify everything so you don’t have to – because someone’s got to try that viral dish that is meant to be amazing and I’m happy to take that hit.
I absolutely love seeing what you’re cooking. When you tag me or send photos, it genuinely feels like I’m right there in your kitchen – just without having to do the dishes.
Here’s to making dinner doable, delicious, and maybe even enjoyable… with slippers on, of course.
Nic x
