I'm Nicole. Here you’ll find easy, delicious, low-cost family dinner ideas that you can make with simple ingredients, without having to spend hours in the kitchen!
On the weekend or on days I have a little time up my sleeve, I do some meal prep to help me prepare for my week ahead. I find it helps me save time, money and energy. The amount of time I dedicate to meal prep each week varies, but this week I had 90 minutes up my sleeve and I made zucchini slice, Mexican beef (for nachos & burrito bowls) and freezer friendly chicken schnitzel.
I also prepared some cabbage by washing and shredding it, ready for quick dinner sides and lunches. 🥬 You can find the full recipes below. The zucchini slice and Mexican beef both feature in my new cookbook The Simple Dinner Editwhich is now available to purchase at all major retailers where books are sold.
