On the weekend or on days I have a little time up my sleeve, I do some meal prep to help me prepare for my week ahead. I find it helps me save time, money and energy. The amount of time I dedicate to meal prep each week varies, but this week I had 90 minutes up my sleeve and I made zucchini slice, Mexican beef (for nachos & burrito bowls) and freezer friendly chicken schnitzel.

I also prepared some cabbage by washing and shredding it, ready for quick dinner sides and lunches. 🥬  You can find the full recipes below.
