If the dinner dread hits you around 4 pm every single day, you’re not alone – and I refuse to let another week go by where we let dinner rule us! This meal plan does the thinking for you so you can get on with, well … everything else! It’s a mix of comforting classics and quick wins: Juicy Oven-baked Beef Kebabs for when you want something fun, One-pan Greek Chicken and Risoni for those “I need zero effort” nights, and Creamy Sausage Pasta because sometimes you just need a bowl of joy. There’s a crowd-pleasing Chicken and Broccoli Lasagne, a Quick Dumpling Laksa for rainy evenings, and two fakeaways (Loaded Potato Taco Bowls and One-pan Beef Ramen Noodles) that taste like you actually tried. Minimal prep, supermarket ingredients, and dinners your whole family will eat – sorted.

I have young boys, and its always a rush to get something quick on table, after a long day at work, any tips around this?

Hi Rachel, thanks so much for your comment, such a great question! I totally get it with young boys and long days. Here’s what I’d suggest prepping on Sunday to make the week easier:
• KEBABS: Prepare the mince mixture and press onto the tray. Make the garlic yoghurt and sumac onions (both keep for a few days in the fridge).
• GREEK CHICKEN AND RISONI: Marinate the chicken up to 24 hours ahead.
• LOADED POTATO TACO BOWL: Dice the potatoes (store in water in the fridge). Make the beef filling ahead (keeps 3 days in the fridge). Guac and salsa can be done 1 day ahead.
• ONE-PAN CHICKEN AND BROCCOLI LASAGNE: Assemble the whole dish up to the step before grilling, then cover and refrigerate for up to 24 hours.
• ONE-PAN BEEF RAMEN NOODLES: Make the sauce up to 3 days ahead.
• QUICK DUMPLING LAKSA: Wash and chop your greens.
That way each evening it’s really just cooking, not prepping. Hope that helps! Nic x
